OCHO + Frappevino = Girl’s Night and Left-overs

Spring break week has begun in Texas, which means my husband-student is traveling to see his brothers. If work, time and money were no object, I would have been sitting next to him on the plane bright and early on Friday morning. But, in light of that, I am trying to make my own spring break fun, which started with girl’s night on Friday. I suggested having girl’s night, and L was great enough to make a real plan. We started off at her house with some appetizers and Frappevino. What is Frappevino you ask? It is basically a frozen wine drink that is very easy to make. 1 bottle of red wine + 1 1/2 bottles of water + Frappevino mix +freezer = Frappevino in about 6 hours.

The package said it would only take 3-5 hours, but I left it in the freezer for 12 hours and it was still pretty watery. It is possible that I didn’t stir it enough before freezing, so the contents didn’t mix completely. When a few of us went shopping at the San Antonio Rodeo, we stumbled on the Frappevino vender and upon trying it, we all bought a box of the mix. Getting back to girl’s night, our plan was to walk on the riverwalk to the Cafe de Artistes at the San Antonio Art Museum. Since it was rainy, windy and cold (check out the Alamo Cam below), we decided to go somewhere a little closer, OCHO at the Havana Hotel, also on the riverwalk.

Ben and I had eaten there once last fall. We were trying to walk to another restaurant, but I got too tired and hungry and we stopped at OCHO and were pleasantly surprised.  I ordered the hamburguesa torta with house fries and split an order of churros with J. I haven’t had a churro in FOREVER, and these were amazing. They also came with a mini cup de creme a.k.a. the best espresso you’ll ever have in your life! If only I could learn to make espresso that good.

Girl’s night was a blast, as we did things girls do best: talk, laugh and eat! I got home around 11:45pm and somehow stayed up for another hour reading blogs, checking twitter and being otherwise entertained by social media. This morning I slept in until 11 am and it was amazing. Pumpkin pancakes with almond butter were on my breakfast/lunch menu and then I started our taxes.


After about four hours of that, I cut some coupons, made a shopping list of very necessary items and headed to the gym for a workout. I had been planning on stopping at Sonic to try their new sweet potato tater tots.  Tots are amazing, so sweet potato tots have to be beyond amazing, right?

Well, after my workout I was feeling like eating semi-healthy, so I skipped stopping at Sonic and I made some roasted veggies including sweet potatoes, green beans and a few left-over fries from last night. The roasted veggies along with my re-warmed burger made for one of the best meals I have eaten in quite a while. I was in food bliss, and pretty much still am as I write this. I absolutely LOVE left-overs of any kind, but especially really good tasting ones that don’t take too much effort to re-create.

Things I am thankful for today: God providing amazing things for me including: good food, new friends, coupons, and for giving me the strength to workout which makes me want to eat a little healthier.

Daily Gratitude

I am thankful for my job which enables me to pay my bills, buy food, and even have money to buy fun gifts for people I love.

Daily Gratitude

Today I’m thankful for rain! We are in a drought in South Texas and it is misting, drizzling and it even rained for about 20 minutes earlier.

Daily Gratitude Catch-up

I’ve missed several days of this. So I’ll just write a few quick things that I am thankful for.

1. Having an abundance of food to eat at any time I please.

2. Having a reliable car that has heat, A/C and a radio.

3. Christian radio stations (especially the bilingual and all teaching ones I love to listen to on my way to work)

4. A home that is warm and a comfy bed. I see a guy sleeping at the bus station in the morning on my drive to work and each day, it makes me so thankful for our home. It also makes me want to buy/give him some warm breakfast and coffee, but I haven’t done it yet.

5. Freedom of religion, to worship God, to meet with other believers, to read my bible & pray in public, to share my faith openly with others(when I am bold enough to do so).

Yay for turkey day

Its the day after thanksgiving and all my in-laws are preparing our thanksgiving meal at the ranch. We at celebrating today because some family went to the last UT v. A&M football game. I volunteered to bring dessert, so check out my turkey cupcakes.


They are the reason we did not leave out house until 3 hours after the planned departure time. Ok, they weren’t the only reason but it did take an hour to decorate them.
Today I am thankful for my new family, a.k.a. my in-laws. God had blessed me with awesome in-laws who are generous and caring and of course, a little crazy (about UT football). Yesterday, when we arrived at the ranch, Uncle Bull told me I could go ride horse was soon as I was ready. Ah! I said hi to everyone, changed clothes and went to the barn. I rode for about two hours and it was awesome. While I was riding I realized it had been since last year at this time since I had been on a horse.  Praise the Lord, I have really missed riding and it is just what I needed after a busy week at work.

It’s Thanksgiving Week

It is about time a got on the band wagon and started posting my daily gratitude for the month of November, but actually after going to bible study last night, I was thinking that maybe a better challenge would be daily gratitude for a year. (Thank you to LC for the verse selections below; she did the work to prepare for leading our girls group and I’m using them for my blog post). It’s easier to think of things we are thankful for during this season because it seems that everyone around us is trying to do the same thing. I heard a convicting quote on the radio yesterday morning:

If we don’t give thanks for the things God has already given us (good & bad), how can we expect Him to give us anything else?

It is so easy for me to question God when things aren’t going the way they should, and take the blessings in life for granted, without offering thanks for either one. As Americans we are used to a higher standard of life than almost everyone else in the world, and each day I take those things for granted as well. I don’t mean to write this to cause anyone to feel guilty, myself included, but to call awareness to the great blessing we each have.

Romans 1:21 For although they knew God, they neither glorified him as God nor gave thanks to him, but their thinking became futile and their foolish hearts were darkened.

After reading the section of Romans 1:21-31, I was getting the idea that if we know God but do not give thanks for his blessings or glorify him by living our lives according to his word, we will be given over to the things of the world and no longer be lights for him. That reason alone is a great motivator for me to start thanking God for all the things I have in my life.

Colossians 2:6-7 So then, just as you received Christ Jesus as Lord, continue to live in him, rooted and built up in him, strengthened in the faith as you were taught, and overflowing with thankfulness.

These two verses compound on the Romans verses. To me, this is saying by living in the Lord, being rooted and built up in him, and being strengthened by our faith we will be people who overflow with thankfulness. I can see in my own life how if I am not in the word and not living my life for Christ, I am not a thankful, joyous person. Keeping our minds focused on the Lord gives us the perspective to live a life that is overflowing with thankfulness, no matter what the situation.

Philippians 2:14-15a 14 Do everything without complaining or arguing, 15 so that you may become blameless and pure, children of God

1 Thessalonians 5:16-18 16 Be joyful always; 17 pray continually; 18 give thanks in all circumstances, for this is God’s will for you in Christ Jesus.

Daily Gratitude Day 1: I am thankful for our Lord and Saviour Jesus Christ, because without His perfect sacrifice, I would not be forgiven of my sins or be able to have assurance of my salvation & eternal life.
